We had a silly, Spring snow storm yesterday that brought four inches of snow, so I didn’t leave the house. Considering that I didn’t go anywhere, I was actually well-behaved. Usually working from home gets me in trouble, because I have a tendency to wander into the kitchen, open the fridge and just stare inside, as if something new and interesting might appear. It never does, but it usually still leads to bad snacking out of sheer boredom.
But that didn’t happen yesterday, thankfully. I had leftover pasta with roasted chickpeas, onions and kale for both lunch and dinner. A snack of banana ‘ice-cream’, mid-afternoon, and breakfast was oatmeal. I usually mix in a tablespoon of Stonewall Kitchen’s Red Raspberry Jam (which I got at a clearance discount at the factory store in Maine–best jam I’ve ever had!)….but because my oatmeal got a little drier than usual, I decided to try something different.
I slathered the jam on half of the oatmeal and then flipped the other side over to make an omelet, or raspberry turnover! It was delicious. This style of oatmeal is my favorite. I use the store brand organic quick oats and make it in a 7″ saute pan. 3/4 cup of water, when it boils reduce heat to medium, and stir in a half cup of the oatmeal. Then walk away and come back in five minutes and it’s usually perfect. Sometimes I’ll add a chopped apple to the boiling water, other times when it’s just about done, I’ll stir in a handful of walnuts and maple syrup along with a banana. It’s all good!
I didn’t go to the gym, because of the snow, but walked on the treadmill for 30 minutes and did 28 squats. No wine, lots of water. Hoping for a similar day today…..and no more snow!
