French Onion Burger
Yesterday was a good day, a lazy Sunday where I watched the snow fall, and then later the sun came out and it all melted away. If it only did that every time! I didn’t leave the house, but still got my half hour of walking in on the treadmill and did 27 squats. Breakfast was eggs and a banana. Lunch was a french onion soup burger and side of arugula salad. The burger was amazing. This was a Plated meal that I altered to be somewhat diet friendly and gluten/dairy free. The english muffin and gruyere cheese went in the freezer for a future use (probably by someone else). Instead of making two burgers from the 12 oz of meat, I made three, so my burger was a smaller, 4 oz size. I also subbed in gluten free flour for the onion sauce. The flavor on this is outstanding. The combination of dijon mustard and carmelized onions, thickened with a bit of flour and beef broth gave the flavor of onion soup. Good comfort food for a snowy Sunday. Dinner was lighter. I made a pasta dish of gluten free fusilli tossed with sauteed onions and kale, a little butter, lemon juice and roasted chick peas. I’ll be having that for dinner again tonight. My one treat for the day was a serving of banana ice-cream, which was basically one frozen banana, whipped with a bit of vanilla and raspberry jam. Recipe with pictures, click here.
And it’s snowing again! Hopefully this won’t amount to much. It is odd to see it in April. I’m ready for the flowers to start blooming. It’s another good day to stay inside, and maybe make a big batch of soup.
