Happy Sunday! Hope you’re enjoying the day. It’s been a relaxing one for me. I took today off from walking, but I did do 25 squats with a 5 pound weight. I also realized today, after finally opening a bottle of flavored vinegar that I’ve had for over a year, is that I can use things like this to make dieting easier by kicking up the flavors of simple foods.
My youngest sister went to the University of Vermont, and last year, my other sister and my nieces went to visit her in Burlington for the weekend, when she graduated. We walked all around the downtown area and there was a wonderful farmer’s market going on and it led us to a small shop, The Saratoga Olive Oil company. They have all kinds of flavored oils and vinegars and I bought a bunch.
There was once I hadn’t tried yet though, Vermont Maple Balsamic Vinegar, and I opened it and splashed it on a leafy green salad with avocado and a drizzle of olive oil. It was crazy delicious, and made my simple salad taste like something a restaurant would serve. Another favorite is their butter flavored olive oil. I need to order a new bottle, I went through mine so fast. It’s a great way to get butter flavor with the benefit of olive oil.
Also tried something new today. I just had fresh fruit until noon. About three quarters of a fresh cantaloupe, and mid-morning, a smoothie from frozen organic blueberries, a teaspoon of honey, and unsweetened almond milk. I learned that trick from my sister, who makes smoothies all the time–if you use frozen fruit, then you don’t need ice cubes and it won’t be watered down.
Today’s meals were the fruit for breakfast, cup of chicken soup and salad with avocado, maple vinegar balsamic and olive oil, and dinner was fresh sole sauteed in a little coconut oil and lemon, baked sweet potato ‘fries’ and the same salad again. It was so good at lunch, that I wanted more for dinner. Back to the treadmill tomorrow! 🙂
